Ingredients
1 white onion
A splash of olive oil
1 tin good quality Italian peeled plum tomatoes
Thyme (a few stalks, picked)
Parsley (a handful, chopped)
1 tin PYSCIS smoked oysters
Sea salt & black pepper
1. Sauté the onion in a little olive oil
2. Chop the tomatoes and add to the pan with some of the juices
3. Season with salt, pepper, thyme, and parsley and simmer for 10-15 minutes on a low heat
4. Meanwhile cook the conchiglie pasta according to the package instructions
5. At the end, mix the tin of smoked oysters into the tomato sauce together with the oil they're marinated in.
6. Stir in some more of the chopped herbs for colour, then pour in cooked conchiglie.
